Hungry for Change

Hey guys!  Now is the second chance for all of you that didn’t get the opportunity to watch the full length documentary “Hungry for Change.”    If you are one of my current patients, you probably  being forced you to view the trailer to this film at your last physical. Then I inundated you with big stacks of healthy eating handouts and sent you on your way.  Well, a some of you opted to not Deep Six the stuff and actually read it.  Many have lost weight and gotten off of their chronic medicines!  Hooray!   This film exposes the hidden additives that are found in our food supply today.  It also features Jamie Oliver, aka The Naked Chef from Food Network, exposing the amount of sugar found in kid’s school milk.  It is definitely worth watching once and sharing with your family.  Even your kids should watch it.  It may subliminally implant the idea of being conscious of what is being put in and on your body.  Lord knows they probably aren’t going to listen to their parents any more than my family listens to me when I evangelize to them ad nauseam.  Think–this film may just save your life or someone’s close to you.

Don’t Hold the Mayo!

Traditional commercially prepared mayonnaise contains high levels of omega 6 oils which as we know lead to many disease states.  Hellman’s mayonnaise gets a C- score on the Fooducate website because of the GMO production.  Even Trader Joe’s mayonnaise which is non-GMO still contains chemicals and natural flavorings.  I stumbled upon this homemade mayo recipe in Mark Sisson’s , The Primal Blueprint Cookbook.

Mayonnaise

Ingredients:

1 whole egg or 2 egg yolks (best to get organic/pastured if possible)

2-3 tablespoons of apple cider vinegar

1 tsp of Dijon mustard

Dash of paprika

Pinch of salt

3/4 -1 cup pure olive oil (use refined or light olive oil)

Directions—

Whisk the ingredients together and drizzle in the oil with a hand-held whisk

Voila!!! 

Ranch Dressing

1 cup homemade mayonnaise (as above)

1 cup cultured buttermilk

1 tablespoon finely chopped green onions or chives

1 tablespoon minced fresh parsley

1 tablespoon finely minced onion

1 small clove garlic, minced

dash of paprika

dash of cayenne pepper

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

Whisk together and enjoy—store in a tightly covered jar in the refrigerator

Say NO to Lean Cuisine

Homemade Pickles

What you will need:

cucumbers (3-4)

2 cloves of garlic

2 sprigs of fresh dill (the flowered heads of the dill taste the best for these pickles, so use them if you can get them)

½ tsp coriander seeds

¼ tsp mustard seeds

¼ tsp whole peppercorns

1/8 tsp red pepper flakes

2 cups of water

1 T sea salt

Here is how we roll

First, decide what size of cucumbers you want to make.  I prefer sliced dill but the kids like the sandwich slices.  Remember that the sliced cucumbers will ferment faster than whole cucumbers.  Put them in a ball jar (or jar of your choice) and add your spices on top.  Then, mix the water and sea salt together until the salt is dissolved.  Pour the mixture over the cucumbers making sure that they are all submerged!  Be sure and leave some space at the top of the jar.  Bah Bahm!  That’s all there is to it!!!

Top off the jar and let it sit on the counter for 3 days.  Then put the jar in the fridge which stops the fermentation process.  The pickles will then keep in the fridge for around 6 months!

You may see a white film or mold at the top of the jar–it is harmless and is just yeast from the fermentation process –just skim that off.

So for all of you hesitant to make your own Probiotics after reading that exhausting handout–this is an easy way to supplement your diet with some inexpensive fermented foods!
